Well...Are you talking doing covers of tracks from vg soundtracks?  If so there's a whole community dedicated to this endeavor at "www.ocremix.org".  You can get all the inspiration you could ask for there, and a hell of a lot of resources.

Anything off the Chrono Trigger soundtrack, is usually a good choice for guitar.  Castlevania soundtracks are also popular choices for guitarists.  I guess it comes down to your personal play style. Are you thinking acoustic or electric?

Castlevania soundtracks, Metroid soundtracks, and anything Final Fantasy VII or later lend themselves to metal stylings pretty naturally.  If you want to look for rarer stuff that nobody really does, I recommend the Phantasy Star series, and SoulBlazer soundtracks.
